For Kris, Victoria Sponge was never complicated or ceremonial. It was the easy thing to bake: butter, eggs, flour, sugar and some jam — ingredients that were normally already at home.

From the family kitchen to Dad’s office

Victoria Sponge appears very early in Kris’s story. He baked it with his mum and, separately, with his sisters from childhood. By around eight years old he was already baking his own Victorias on his own and taking them into his father’s office. His dad can still recite a Victoria Sponge recipe from memory.

Our version

We keep it recognisable: layers of butter sponge, buttercream and homemade jam. It does not need to become excessively sweet to feel special. Simplicity, done properly, is the point.
