By the 1800s, lemon curd was already a familiar flavour on British tea tables. Our Blueberry Lemon Curd uses that sharpness as the starting point, pairing it with blueberries and a lemon-lime sponge.

The balance

The lemon curd needs to bring genuine acidity. Blueberries add fruit and the citrus sponge keeps the cake fresh, so the whole thing does not rely on sweetness alone.

Our version

Lemon-lime sponge, lemon curd and blueberries. It is clearly a Gay Baker cake, but the heart of the flavour is still that British curd we know from home.
